The shiny face and the dull face are an artifact of the mill. Two sheets go through the final rollers stacked together, so the faces touching steel come out polished and the faces touching each other come out matte. Functionally identical. It changes nothing.
People will still argue about it in a kitchen for twenty minutes. Everyone has a firm position on a difference that does not exist.
